I recently had the pleasure of sampling freekeh from Ecoideas. This low-gluten grain has a delicious nutty taste and satisfying texture, and it goes great in salads, soups, as a rice substitute, etc. Harvested when young, it provides more protein, fibre, vitamins, minerals and prebiotic benefits than mature wheat!

Salads can be really fun to make (and eat) as you can have a lot of variety in what you put inside! I always start with a base of chopped spinach, and then everything else is just whatever I happen to have on hand. This time I added corn, red peppers, hemp hearts, and freekeh :)

For more flavour I used Garden Herb Salad Dressing from Fody Food Co. This mouthwatering dressing features extra virgin olive oil, expeller-pressed sunflower oil, Himalayan pink sea salt, raw organic cane sugar (among other delicious and clean ingredients), and is gluten, lactose, onion and garlic free!
