Organic mini baguettes; perfect for a healthy bruschetta on New Year's Eve!

Amidst the heavy foods we’ve all been consuming lately, it’s important to mix it up with some lighter bites. Bruschetta is a nice, simple, and refreshing hors d’oeuvre option which I love using during the holidays, and these organic bite-sized baguettes are the perfect companion. The simple flavours and ingredients of these baguettes taste great on their own as well. A tell-tale sign of a “good for you” product is its limited and comprehensible ingredient list; spelt flour, extra virgin olive oil, natural yeast, sea salt, and malted barley are all that these contain.

Although these do contain gluten, spelt is an easily digestible ancient grain so those with gluten intolerances tend to find this type of flour quite manageable. Extra virgin olive oil, which is used as well, differs from regular olive oil in that it is unrefined and is the highest quality olive oil you can find. This is because it is not treated with chemicals nor altered by temperature. Malted (unprocessed) barley is also an ingredient in these baguettes, which contain fibre, potassium, folate, and vitamin B6; these nutrients work together to lower cholesterol and decrease your cardiac disease risk.

I very much enjoy the crispiness and lightness of these baguettes. They are lightly salted so it’s not overpowering to the tomatoes. They are easy to bite into (not too hard) and fit perfectly in your mouth which means no crumbs! Yay!

In my bruschetta:

- 8 tomatoes

- 1/3 cup chopped fresh basil

- 2 minced garlic cloves

- Tablespoon balsamic vinegar

- 1 teaspoon extra virgin olive oil

- Salt and pepper, to taste

- Mini baguettes
